Aunty Betty Plain Biscuits

Yes, the Aunty Betty Biscuit recipe makes a lot of biscuits (5 dozen to be in fact), which is awesome because they freeze really well! and are perfect to have stocked away in the freezer for when quests or family pop over for a cuppa! You can make these biscuits any flavour you like too also.

Plain – as per recipe.
Choc Chip – add some chocolate chips.
Chocolate – add some cacao powder.
Jam Drops – push a hole in the middle and add some jam of choice.

To freeze we simply put them all in an airtight container and freeze.

Ingredients:

  • 250 g butter soft
  • 100 g raw sugar
  • 2 large eggs
  • 1 tsp. vanilla bean paste (recipe linked above) or extract
  • 3 c self-raising flour

Instruction:

  1. Preheat oven to 160ºC and line 2 baking trays with paper.
  2. Add sugar to mixing jug and blitz 5 seconds/speed 9, insert butterfly tool and add butter.
  3. Cream butter and sugar using butterfly 10 – 15 seconds/speed 3 (check after 10 seconds). You will need to scrape down the sides and repeat this step 3 – 4 times. You want the mixture pale and creamy.
  4. Add vanilla. Then add eggs one at a time through the hole in the lid while mixing on speed 2.
  5. Remove the butterfly tool.
  6. Add flour 1 cup at a time through the hole in the lid while mixing on speed 1. Once all flour has been added increase to speed 4 for and mix 10 seconds. Use a spatula to mix any flour not quite mixed in.
  7. Roll teaspoon sized amounts into small balls, place on oven trays and flatten with a fork.
  8. Bake in the oven for approx. 15 minutes or until golden. Allow to cool on a wire rack before icing or decorating.
  9. Preheat oven to 160ºC and line 2 baking trays with paper.
  10. Blitz sugar in a food processor or blender, 5 seconds/high speed.
  11. Cream butter and sugar with electric beaters until pale and creamy.
  12. Add vanilla. Then add eggs one at a time and continue to mix on medium speed.
  13. Add flour 1 cup at a time and mix on low-medium speed. If required, Use a spatula to mix any flour not quite mixed in.
  14. Roll teaspoon sized amounts into small balls, place on oven trays and flatten with a fork.
  15. Bake in the oven for approx. 15 minutes or until golden. Allow to cool on a wire rack before icing or decorating.
